vegan 'Kniddelen' / flour dumplings

'Kniddelen' is a traditional luxemburgish recipe which is still very popular today. 

My kids do love this dish too.
It's actually a very simple dish of flour dumplings, boiled in hot water and served with roasted bacon cubes.
Over the past two years I noticed that I dislike this dish more and more, and the last few times I made 'Kniddelen' with eggs, milk and cream cheese as from my traditional recipe, I didn't eat any of them because I was repelled by the smell and taste.

So when my son asked me this morning if I could cook 'Kniddelen' I decided to finally look for a vegan recipe. 

It's great to see how simple and delicious vegan cooking can be!

So here's the recipe:

- 400 gr wheat flour 1050 (or a different kind of flour)

- 450 ml of Oat Drink

– 1 teaspoon of seasalt

I doubled the ingredients to make sure to have some leftovers for my husband in the evening, so twice the above mentioned is a good quantity for 2 adults  and 3 kids. 

Put the ingredients all together in a big bowl and use a whisk to stir the ingredients until it's an even dough. 

Let the dough rest for about 15 minutes. 

While waiting, I prepared smoked tofu, mushrooms and apple puree as side dishes.

I cut the smoked tofu into small cubes and roasted it in a pan. 

The mushrooms were sliced and also put into a frying pan. At the end I added salt, pepper and soya cream.

The apple puree was not homemade this time.

The 'Kniddelen' are boiled in a big pot with salted water. Once the water is boiling, you can add the dough by putting little portions with a spoon into the water.

Once the dumplings are boiled, they will bump up and float on the surface of the water.

Get them out of the warer and serve them with tofu, mushrooms and apple puree.

It's easy and fast to created three dishes 'Kniddelen with mushrooms' 'Kniddelen with tofu' and 'Kniddelen with apple puree' to please different tastes.
