So happy to present you today's creation : homemade vegan pumpkin -carrot soup.
Though there are certainly other recipes like this on the web, this one I created spontaneously this morning, so without any inspiration by an existing recipe.
What do you need to create a soup?
It's all easy:
1. choose the basic: here: pumpkin
2. add some matching vegetables: I chose carrots & potatoes
3. don't forget the fluids: soy drink & herbal bouillon
4. seasoning : I chose salt, pepper, curcuma and nutmeg
. . . and off you go !
300 gr pumpkin
200 gr carrots
300 ml soy drink (light or unsweetened)
300 gr potatoes
750 ml boiling water
1 broth cube
salt & pepper
1 ts curcuma
1 ts grated nutmeg
peel the pumpkin and cut 300 gr into small bits
peel the carrots and also cut them into small bits
put the pumpkin, carrots and soy milk into a large pot and cook for about 10 minutes
peel the potatoes and cut them into small bits, wash the potatoes, then add them to the pot
put the boiled water into the pot as well as the broth cube
let it boil for another 20 minutes
take the pot off the heat and mix the soup with the blender
add salt, pepper, curcuma and grated nutmeg
curcuma adds some spice to your soup as well as some nice color; nutmeg underlines the sweetness of the pumpkin and carrots
