preparing the D I P
- take 3 or 4 spoons of unsweetened soy yoghurt
- add some harissa, lemon juice or lemon concentrate, some salt and some ground paprika powder
the dip is ready
preparing the G U A C A M O L E

ingredients for the quinoa wraps
- 200 gr quinoa grains tricolore or white
- 500 ml herbs bouillon ( 200 ml boiling water with a broth cube)
- 200 gr cherry tomatoes
- 1 green pepper
- 1 red onion or shallot
- some olive oil for the frying pan
- 100 gr smoked tofu
recipe:
- put the bouillon (water and broth cube) into a sufficiently large pot and bring the water to boil
- then add the quinoa and let them boil on medium heat for about 15 minutes, take it off the heat and drain the quinoa
- meanwhile wash and cut the vegetables: onion, green pepper and cherry tomatoes
- cut the smoked tofu as well into little bits
- put some olive oil in the frying pan to fry the smoked tofu
- after the tofu has taken some color, add the onion bits, later on the green pepper and cherry tomatoes and fry the mix for some minutes
put the quinoa into a bowl, add the tofu and vegetables and mix all the ingredients
I used ready made wraps which I only had to fill with my delicious filling
and there you go with a yummy vegan dish!
